A zesty and fresh, chilled couscous salad with BayFarms avocado, feta, and fresh herbs. Serve it as a side dish to grilled meat, fish or all on its own as a healthy and hearty lunch!

Ingredients

  • 2 ripe medium BayFarms Avocado
  • 200g Crumbled Feta
  • ½ Cup chopped spring onion
  • Juice of 1 Lemon
  • 50g punnet Microgreens
  • ½ telegraph cucumber diced
  • Handful fresh flat leaf parsley chopped
  • ¼ Cup Olive oil

    Method

    • Bring a pot of salted water to a boil, drop in the dried couscous, then simmer for 8-10 minutes until al dente. Drain and toss with a little olive oil to keep from sticking.
    • Place all of the prepared greens, herbs, feta and couscous in a large mixing bowl. Next, drizzle in the olive, and lemon juice. Gently toss everything together until evenly combined. Season with salt and freshly cracked black pepper, divide between bowls and serve.
