Try this delicious Pomegranate, Orange, and BayFarms Avocado Salad with mixed greens with pomegranate seeds, orange slices, fresh BayFarms avocado, feta cheese, and a simple citrus dressing.Β
Ho ho ho and away we go! We are counting down to Christmas while jumping into summer with a delicious avocado salad idea in very Christmas green and red. Weβve substituted Pomegranate seeds (wow they are hard to get these days!) for goji berries or you can use dried cranberries or dried cherries. Enjoy and let us know what you think!
Ingredients
For the Salad:
- 8Β cupsΒ mixed salad greens
- 1Β Β cupΒ pomegranate seeds or dried cranberries or dried cherries
- 2Β small orangesΒ peeled and sliced
- 1Β large avocado or 2 small avocadosΒ pit removed and sliced
- 1/3Β cupΒ crumbled feta cheese
For the Dressing:
- 3/4Β cupΒ extra-virgin olive oil
- 1/4Β cupΒ white wine or white balsamic vinegar
- 3Β tablespoonsΒ fresh orangeΒ juice
- 2Β tablespoonsΒ fresh lemon juice
- 1/4Β teaspoonΒ fresh lemon zest
- 1Β tablespoonΒ honey
- Coarse salt and ground black pepperΒ to taste
Instructions
- Place the greens in a large bowl. Top with pomegranate seeds, orange slices, avocado slices, and crumbled feta cheese.
- To make the dressing, combine olive oil, vinegar, orange juice, lemon juice, lemon zest, and honey in a small bowl or jar. Whisk or shake until combined. Season with salt and pepper to taste.
- Drizzle dressing over the salad and serve.
Note: The dressing recipe makes a lot so you can make this salad multiple times and the dressing will keep in the fridge for up to 2 weeks.
