Ingredients
- 1 ripe medium BayFarms Avocado
 - 4 free-range eggs
 - 1/2 sliced red onion
 - 1 cup of spinach
 - 4-5 sliced mushrooms
 - 1/4 cup milk
 - Olive oil
 - 1 Tbsp butter
 - Salt and pepper
 - Fresh crusty bread to serve
 
Method
- Slice mushrooms and red onion.
 - Heat Olive oil in fry pan, add mushrooms, onion and spinach, cook a few minutes, remove from pan.
 - Crack 2 eggs into bowl, add half the milk, whisk thoroughly.
 - Add butter to hot pan, pour in egg mixture and gently move mix around so mixture cooks evenly.
 - Spread half mushroom mix on half of the omelette.
 - Halve the avocado, slice and place onto toppings.
 - Fold the other half of the omelette over the toppings.
 - Repeat steps 3-7.
