Ingredients
- 1 Baguette
- 2 ripe medium BayFarms Avocados
- Juice of 1 lemon
- Chopped Fresh parsley
- Olive oil
- 100g Feta
- 100g Pomegranate arils
Method
- Pre heat oven to 180*
- Slice Baguette to desired thickness and place on a lined oven tray.
- Drizzle Baguette with olive oil until evenly coated
- Bake for 10-12min or until edges are slightly toasted.
- Scoop Avocado flesh into a bowl and mix with lemon juice, chopped parsley, salt, and pepper.
- Once Baguette slices have cooled top with Avocado mixture, crumbled feta, and pomegranate arils.
